Anolon Cookware – I bet you’ve been wondering, like a lot of people often do, ‘Are they really that good?’ Well, as the pioneers of hard-anodized nonstick cookware, and with about four decades worth of experience under their belt, we like to think this brand has something unique to offer. 

The Anolon brand brings us a lot of patented technology that they say is the sauce that brings gourmet cooking to the average kitchen. PrecisionForge, Infinity Slide, Sure Grip, Unity Surface, Interlock, SearTech–these are just some of the technologies that Anolon incorporates in production to bring you durable, affordable, and functional cookware. But is it all bells and whistles?

I’ve used a skillet and Dutch oven pot from this famed brand that I would highly recommend t anyone looking to purchase. On the other hand, I’ve also had the displeasure of using Anolon cookware that did not live up to the hype. Taking what I already knew, I set out to investigate just what else Anolon had to offer and what other users have experienced using this famed cookware. 

Anolon sells 10 different cookware collections, and each presents unique value to the consumer.

Anolon Cookware Collections Comparison

With Anolon, there’s something for everyone. The brand keeps innovating and bringing you affordability with quality. Before stepping out to purchase your next set, determine your cooking needs, the type of stove, your budget, and it should be easier to make a selection. But here’s what we think about each of Anolon’s sets:

AnolonX

The devil is in the details, and the X collection does not miss a beat. The AnolonX brings you SearTech, for searing and caramelizing like never before. The diamond-pattern, steel mesh over nonstick that unites the heat and oil under the food is looking to revolutionize flavor in cooking, making the X collection an undisputed champ in terms of innovation.

If your budget allows you to purchase this premium (expensive) X set comfortably, then you’ll definitely be in for the performance of a lifetime. But, if your needs don’t revolve around searing and caramelization, then you might be better off getting something more affordable. Check out any of Anolon’s closely competing sets at a fraction of the price–or pick out select pieces based on your cooking needs.

Anolon Advanced
The Advanced set is Anolon’s best-selling collection. We can conclude that its cooking performance and semblance of durability at a budget price is what makes this Anolon’s best-selling set. All of Anolon’s nonstick cookware sets offer the same ease of maintenance, and the cooking performance does not vary too much. Therefore, when you consider durability (remembering that all nonstick degrades), the low-cost Advanced set presents real value to consumers.
Anolon Advanced Home

The Advanced Home set is pretty much a replica of the Advanced, with measuring marks and a sapphire-infused nonstick. The performance and price are match-for-match. The Advanced gives a slight advantage with easier cleaning and more practical pieces in the collection. Again, not being able to use it on an induction plate or in the dishwasher can be a deal-breaker for most. Ease of cleaning (the lack of) is the Achilles' heel for this set, despite decent cooking performance and somewhat good construction quality.

The Advanced collection has had more years of consumer feedback; thus, it might seemingly have poorer performance in comparison to the Advanced Home. But, these pans have very subtle differences in appearance, performance, and durability. They are even similarly priced, but the Advanced set features more practical items in the collection, it has select pieces with pouring spouts, and the residue-prone markings are not present. Therefore, if you’re on the fence about it, go for the Advanced unless measuring marks are part of your requirements.

Anolon SmartStack

The SmartStack frees up cupboard space without compromising on full-size cookware. A stackable option saves more than just storage space; it also allows you to put away your cookware neatly. Anolon invests in quite a number of innovations to make this set as storage-efficient as it is. And while this is not the cheapest stackable cookware set, it is definitely one of the most efficient in terms of performance and is very durable–quite the combination. It is also Anonlon’s own favorite in the nonstick range.

Anolon Nouvelle Luxe

The Nouvelle Luxe collection set has excellent heat control with a copper core sandwiched between hard-anodized aluminum. The stainless steel encapsulant also allows the pan induction ability–but this has been reported to have poor performance, so not recommended. Again, this set is lined with Anolon’s Infinity Slide nonstick, ensuring that you can cook your food without the worry of sticking or burning–and cleaning up afterward is just as easy. The stainless steel lids and handles also ensure that you can toss the whole ensemble into the oven, up to 500°F.

Designed to showcase the heat efficiency of copper, the durability of hard-anodized aluminum, and the cooking performance of sapphire-infused nonstick, the Nouvelle collection is a kitchen stand-out. The set performs better than most standard nonstick cookware and can give you good years of use with proper care. Therefore, we recommend it for anyone using other stovetops besides induction tops and looking for an all-rounded performer in the kitchen.

Anolon Accolade

The Accolade collection is one of Anolon’s high-end offerings. Made with Precision Forge technology, the Accolade embodies durability and guarantees even heating and distribution. The set features tempered glass lids, Sure Rest stainless steel handles attached via flush rivets for a Unity Surface style, and a magnetized stainless steel base with extra steel caps that enhance use with an induction top. Add to that the sapphire-infused coating on the interior and exterior, and it’s clear that durability is indeed highly regarded for this set.

The dark gray, crisp finish set is a beautiful addition to any kitchen. However, this set needs way more care to stay in ship shape than is practically possible in a busy kitchen. Yes, nonstick is only as durable as the care it’s given, but this calls for a little too much given its price point. As long as it’s functional, the cooking performance is excellent for most cooking needs. But, the price tag is too high for the delicate nature of this collection.

Anolon Nouvelle Stainless Steel

The Nouvelle Stainless Steel set is the best stainless steel offering by Anolon. This set incorporates a multi-layer base to give it the heat conductivity and distribution of aluminum and copper and the heat retention of stainless steel. The steel base makes the cookware induction top compatible, while the steel lids and handles give the entire set excellent high heat tolerance.

This is a good stainless steel cookware collection at a bargain of the price you have to pay for ‘bigger and better brands.’ The performance is adequate if you know your way around stainless steel cookware. It is also relatively easy to care for and maintain the pieces in this set. The small saucepan is a bit of a letdown and a potential hazard. Otherwise, this will be a pretty functional set for a medium-sized family.

Anolon Allure

The Anolon Allure is the most well-rounded set at Anolon’s mid-range offering. From the heavy-gauge hard-anodized aluminum to the flush rivets that do not interfere with the sapphire-infused triple-layer nonstick to the clear tempered glass lids, and stainless steel handles, the Allure collection is built to withstand heavy kitchen use without flinching. It’s not induction compatible, which is a bit of a letdown. This is probably one of Anolon’s best options for purchasing a cookware set–it gives quality while keeping the costs affordable. Unless you’re really set on using an induction top, then this is a set worth your consideration.

Anolon Tri-Ply Clad

The popular Tri-Ply Clad is a durable set of cookware that delivers on cooking performance. It offers versatility in your cooking and almost always delivers. It features an aluminum core sandwiched between two layers of stainless steel but does not have the excellent heat control of the Nouvelle. The stainless steel lids and handles give the set high heat tolerance. You are more likely to burn your food if you’re not mindful–but with proper knowledge of cooking with stainless steel, you should experience less sticking than a lot of users report. As far as price goes, you’re getting good quality stainless steel cookware at a fraction of the price you’d pay for big brands, so this is definitely one for the cart.

Anolon Advanced Tri-Ply

The Advanced Tri-Ply is a budget-friendly option for anyone looking to get in the stainless steel game. The heat performance is not the best, as it features silicone-wrapped handles and tempered glass lids that lower its heat tolerance–this should be a worry reserved for nonstick cookware. However, with a bit of getting used to it, you can figure out your optimal cook times and temps to spend less time cooking or cleaning burnt food off your pans. We’d advise that you opt for any of Anolon’s other stainless steel sets unless budget is a big factor.

Finally, Anolon sells cookware in sets and as open stock. It makes more economic sense to buy them as a set and is less tasking than picking individual pieces, but you’re not confined to taking home a complete set. So, do your homework and make the best choice.

AnolonX

The AnolonX collection is one of the most tech-forward cookware sets and is designed to meet the needs of the modern kitchen. The highlight is the hybrid nonstick and patented SearTech technology that comes together to bring you more flavourful dishes. But does it live up to expectations? Let’s explore and find out whether AnolonX has the makings of earning the title ‘preferred cookware for homes worldwide.’

Construction

Right off the bat, the AnolonX set looks professional and feels premium. The interior and exterior walls feature a dark, matte-gray nonstick finish that will bolster the aesthetics of any kitchen–too bad if you like vibrant colors in your kitchen. This collection is a heavy-duty cookware set made of thick, hard-anodized aluminum and comes with a full-cap, stainless steel induction base that allows for even heat distribution. However, the thick stainless steel takes significantly longer to heat up. 

anolon x frying panThe handles on this set are metallic and have enough room to feel comfortable when handling the cookware. The 12’’ frying pan, the dutch oven pot, and the  4-quart saucepan also come with helper handles for extra balance when transferring, which is a nice touch. The cookware (like all other Anolon sets) also features hanging loops that can alternately be used for holding cooking utensils. The handles are comfortable when handling your cookware, but always keep oven mitts handy when handling them hot despite the stay-cool assurance. 

The lids are made of tempered glass to allow for easy monitoring without lifting them. They also sport reinforced metal rims and lifting handles. But as always, Anolon skipped venting, so any trapped steam will cause quite the rattle when trying to escape. On the other hand, the rims are evidently thicker, which is quite helpful in preserving the cookware’s structure when cooking, stacking, or nesting. In addition, the flat rivets aid in seamless storage without the worry of the stacked pots scraping the nonstick. The clean finish, flat-riveted surface is also quite handy for stirring and cleaning. 

Coatings

This release by Anolon brings you Anolon’s triple-layer non-stick cooking with SearTech, which is advertised to take your cooking to the next level in terms of flavor. SearTech refers to an extra diamond-patterned, 304 steel wire mesh that is slightly elevated off the nonstick base. The technology unites heat and oils directly under food, which is brilliant if you think about your oil escaping to the walls or settling in one corner on your regular cookware.

For searing, sauteing, and caramelizing, the technology on this collection works like a charm. As for other cooking styles, you might not really experience the brilliance of the hybrid coating (as expected). But, when they say it sears like cast iron and cleans like nonstick–this has seemingly been the experience for a significant percentage of users. Not without a handful of user complaints, but those are part and parcel of consumer feedback.

If you’re used to regular nonstick, using this set without proper guidance might actually lead to a bad experience. The manufacturer advises that; you should always preheat your pots and pans (don’t do this with regular nonstick), do not skip your dash of oil or butter, do not be in a rush to move your proteins before they fully caramelize, and avoid tossing chilled foods/ foods with moisture onto the pan to avoid thermal shock (what makes food sticky). Sadly, this information is not available on a pamphlet, and you have to actively seek out Anolon’s ‘how to videos’ online

Another tip that I have found that helps keep the X collection in top performance is to avoid stirring. Now, this may come as second nature, but if you feel some resistance, the protein is not ready to turn. Otherwise, your food will break and form a tough glaze on the mesh. Regardless, deglazing is easy with some water and persuasion from your cooking stick. Follow that with a quick swirl of water and gentle liquid soap, wipe it down, and you’re good to go.  Anolon claims that the cookware is so durable that you can use metal utensils–but that might be a bit of a stretch.

Compatibility with Different Stovetops and Oven Ranges

The full-cap, edge-to-edge, thick stainless steel base gives the cookware excellent induction properties. The base allows for even and optimum heat retention, even though it takes a while to heat up. But the cookware can be used on pretty much any stovetop and is also oven safe up to 500°F. The glass lids are only safe to 350°F.

Price Range

The X collection is Anolon’s high-budget offering. You can get it from Anolon’s website, Williams Sonoma, and a few other select stores.

Anolon markets this collection as a greener alternative to ceramic cookware on account of its durability. But is it really 16 times longer lasting than regular nonstick and 80 times more than regular ceramic?

Construction

The Advanced Home collection is made of hard-anodized aluminum and has a brushed metal appearance. You can get yours in either indigo, onyx, bronze, or moonstone color. The heavy-duty, flat aluminum base allows fast heat conduction, eliminating hotspots. This makes it perfect for searing. The heat retention is not as great, meaning you have to keep regulating your flame when cooking.

The set features stainless steel handles wrapped in latex-free silicone for comfortable handling when hot–SureGrip handles. However, you immediately notice a visible sim where the silicon meets the metal shine, making the pans look cheap. The handles are also angled upwards, which admittedly makes for a better grip. 

The pieces in the set feature different profiles designed for your convenience, with options ranging from flat, grilled, split profile (grill and flat), circle, square, deep, shallow, tapered sides, flared sides, etc. It is convenient to have a collection that allows you to pick out a piece that does exactly what you intend.

Both sides of the pan are coated in an easy-wipe, PFOA-free nonstick. However, this set features measuring marks intended to make measuring ingredients a breeze. Well-intended as that is, it makes it harder to clean these little grooves, as does the food that gets caught in the rivets. Speaking off, this set is not dishwasher safe, which is a huge turn-off for most people.

The unvented lids are made of shatterproof glass. They have metal rims that are notorious for collecting grease and make cleaning all the more hectic. The handles on the lid are also silicone-insulated.

Coatings

The Advanced Home collection features what Anolon calls sapphire reinforced, Infinity Slide nonstick. The coating is pretty resistant to abrasion, but with reckless use, any form of non-stick will quickly let up. Keep the flames below medium; else, you will quickly impact durability. Also, don’t use metallic utensils even if it says so.

The sapphire-infused nonstick enhances the food release on this cookware set. Cleaning is also relatively fast, as a simple wipe down can get most of the residue off–except, of course, for those markings and rivets.

Compatibility with Different Stovetops and Ovens

The heavy-duty aluminum base is great for heat conduction on most stovetops but is not magnetic and will therefore not work on induction tops. Additionally, the silicone grip handles reduce the heat tolerance of the cookware, leaving the cookware oven safe up to 400°F. The glass lids are only safe to 350°F.

Price Range

Considering the cost of some of Anolon’s sets, I would list this as a budget option.

What exactly does the best-selling collection from Anolon offer? Is there a difference between the Advanced and the similarly priced Advanced Home Collection?

Construction

Basically, this is the original blueprint for the Anolon Advanced Home set. The only difference in terms of construction is in the color offerings, where you can get the pans in either bronze, graphite, or Indigo. The cookware retains the following: hard-anodized aluminum construction, nonstick coating on the interior and exterior, dual-riveted stainless steel handle with silicone wrapping, tempered glass lids with metal rims, and silicone padded steel handles.

Avoid high heat as these pots have been reported to warp. Stick to low and medium flames to keep the pans in shape and preserve the delicate nonstick. On the flip side, this does mean you will spend unnecessary extra time cooking. 

Coatings

The major difference between the Advanced and Advanced home collections is in the coating. The Advanced collection features a more traditional triple-layer nonstick coating called Autograph 2 by Du Pont. This gives the Advanced collection a matte black appearance instead of the sparkly effect of the sapphire reinforced Infinity Slide on the Advanced Home.

Performance-wise, Anolon admits that there’s not so much difference. However, the Advanced’s nonstick has come under heavy fire for not surviving any significant lifespan. Most reviewers say that it fails from about a year of average use. This directly translates to poor cooking performance, not to mention cleaning (also not dishwasher safe).

Compatibility with Different Stovetops and Ovens

The Advanced set is compatible with most stovetops but cannot be used on an induction plate. It is also only oven safe up to 400°F. High oven temperatures can affect the silicone-wrapped handles, so you need to be wary of that. The glass lids are also only safe to 350°F.

Price Range

The Anolon Advanced goes for the same amount of cash as the Advanced Home, placing it in Anolon’s budget offerings.

Construction

The SmartStack is Anolon’s hard-anodized collection that takes a special interest in storage, alongside the usual performance and durability. The construction is customized to allow the cookware to stack together and occupy a minimal footprint in your cabinets–a move that’s actually worked. The brilliant part is that you still get your full-size cookware and enough lids, which is something other stackable cookware skimps on. The pots and pans are in the regular round shape, with non-stick coated interiors and exteriors. They also feature a stainless steel cap for better induction. 

For their stacking ability, the silicone-wrapped handles play a big role. The handles feature Anolon’s proprietary InterLock technology, allowing the top pan’s handle to neatly fit in the larger, bottom-placed pan’s handle. Now, this does mean that the handles are not as ergonomic and comfortable as your usual Anolon quality. However, the long handles have a slight angle upwards that aids in grip and also ensures the inserted pan doesn’t scrape the bottom-placed pan’s nonstick. The dual rivets on the handles also flush within the interior, complementing the Infinity Slide nonstick. This ensures less scraping when stacking–and of course, easier cooking and cleaning.

anolon smartstack handlesThe lids also play a significant role in stacking. The tempered lids feature interlocking knobs and can be stacked separately–a big move from Anolon’s usual handled lids. These knobs get hot when cooking and are less comfortable to hold (there’s an obvious, minor trade-off here). The lids are still slightly curved to allow condensation to slide to the rims and give you a clear visual of your cooking. The lid’s metal rims are also smooth to lessen the chances of scratching the cookware. 

How does this set actually free up cupboard space? Anolon claims that it efficiently frees up 62% via the stacking tech. Well, you can store your cookware in two separate stacks. The first stack rises to about 13’’, comprising a tower of pots, the steamer, and the smaller lids nested within. The second stack is about 5’’ tall, with the skillets stacked together and the larger lids nested. You get a silicone trivet that you can use before stacking the lids or as extra protection should any of the cookware get dinged. But, as far as space efficiency goes, the SmartStack delivers.

Coatings

The SmartStack features Anolon’s sapphire-infused triple-layer nonstick on the interior and exterior. The nonstick is only as durable as the care you give it, which also translates to the ease of cleaning. Some users followed the ‘usable with metal utensils’ and reported scraping and light scratching–therefore, be wary. Also, stick to handwashing to ensure longevity despite the set being dishwasher safe. 

Compatibility With Different Stovetops and Ovens

Thanks to the flat, rim-to-rim, stainless steel cap, the cookware is compatible with all stovetops, including induction tops. The silicone-wrapped handles, however, lower the oven heat tolerance. Therefore, the cookware is only oven safe up to 400°F, with the lids only recommended for 350°F.

Anolon’s Nouvelle line brings you the heat efficiency of copper with the durability of other metals. The Nouvelle Luxe adopts a European style design, with flared silhouettes, and comes in sable or onyx color options.

Construction

The Nouvelle Luxe line features cookware constructed from heavy-gauge, hard-anodized aluminum, with a full layer of copper between the aluminum. Copper on its own is quite light (read, not durable), expensive and hard to maintain. By sandwiching the copper between hard-anodized aluminum, you get the heat efficiency of copper, with the durability of hard-anodized aluminum. Copper heats up incredibly fast and cools down just as quickly, essentially giving you great temperature control.

The flat base is a thick cap made of aluminum, a copper layer, and a magnetized steel encapsulant. The magnetized steel gives the cookware its induction properties. However, many reviewers have complained that it takes much longer to heat up on the induction top and at higher temperatures than average cookware. Additionally, the sharp edges on the base cap are at increased risk of scratching the cookware when stacked or when sliding across the resting surface–glass stovetops, countertops, etc. Other stovetop users seem delighted with the quick conduction and fast, even heat transfer.

The handles are made of stainless steel and attached to the cookware via dual rivets. The rivets flush into the interior via Anolon’s Unity Surface tech. The lids are made of stainless steel, which raises their heat tolerance but compromises your ability to monitor food without lifting them. The lids are also deep and dome-shaped, accommodating more steam build-up, but are also quite space-consuming when storing. 

Coatings

The interior and exterior surfaces are coated with a sapphire infused, triple-layer nonstick. The food release is great with the Nouvelle Luxe’s Infinity Slide, but be careful to use nonstick-friendly utensils to avoid scuffs on the nonstick. Though dishwasher friendly, hand wash the cookware to ensure longevity. Also, stick to low and medium flames as recommended for nonstick cookware.

The Anolon Accolade collection is marketed for home chefs who want to exercise their cooking creativity at home. But is this gourmet cooking partner what it’s set out to be?

Construction

The Accolade collection is yet another hard-anodized aluminum set. This time, the only difference is that Anolon introduces a new crafting technology–Precision Forge Tech. The definition is that Anolon places metal where it matters most with extreme pressure and weight. The result? Thick bases, thin walls, and ultra-tough rims. The impact? Cookware whose bodies facilitate even and efficient heat distribution. Most users have reported good heat retention from the rim-to-rim base and fast conduction from the thin walls for even cooking.

The bottom features a flat, shiny, magnetized, impact-bonded stainless steel base that gives the pan induction capability. The rimmed slotted bottom has additional steel caps meant to enhance performance, but these have been notoriously reported to scrape the nonstick on other pieces when nested. They also offer some resistance and create scuffs when sliding across surfaces or moving burners. And in addition, stick to medium and low heat as this set has had several complaints about warping.

Anolon Accolade


This set carries Anolon’s SureRest stainless steel handles. The handles are comfortable when holding the cookware but get quite hot after cooking and definitely require mitts or a towel. The handles are attached to the cookware via rivets. The cookware’s flush rivet, Unity Surface style, makes the interior continuous for easy stirring and cleaning. And the tempered lids are properly fitting, though their protruding handles make them a nightmare when storing.

Coatings

As is Anolon’s signature, both interior and exterior are covered in PFOA-free triple-layer nonstick. This set has the sapphire-reinforced version, which reportedly is not immune to scratching and scuffing as all other variations. It helps to use nonstick-recommended utensils, avoid high heat, avoid stacking the pans without a protective layer and probably opt to hand wash even though it’s dishwasher safe. But in short, this is a high maintenance set if you want to get time value for your money.

The rim-to-rim, magnetized, flat stainless steel base with extra steel caps works great with all stovetops, including induction. The cookware is also oven safe up to 500°F. The glass lids are only safe to 350°F.

Some buy this collection to get a break from the anxiety that is nonstick cookware, while others buy it for its English-style aesthetics.

Construction

The Nouvelle Stainless Steel collection is a set that embodies polished stainless steel construction. They feature shiny exteriors that complement the tulip shape of the pots for an undisputed elegant look. That aside, the smaller base (bottom of the tulip) does have its share of problems. For example, it facilitates less contact with the burner, which could significantly slow down heating than if it were larger.

The set comes with a multi-layer metal base consisting of aluminum, a copper core, and a magnetized stainless steel cap. This 5-layer base aims to give the cookware efficient heat control and distribution. While copper is an excellent heat conductor, users have found that it took significantly longer for the pan to heat up, but this is probably due to the thick base. It was also problematic making temperature regulations, but users who reported that issue also said they quickly acclimatized.

The pieces in this set are heavy. From the multi-layer base to the stainless steel handles, it takes some elbow grease to flip and toss food. The most apparent downside here is that the smallest saucepan tips from the handle’s weight when empty (or with little content), which is a burn hazard, not to mention that it can pour your food mid-cooking. Speaking of size, the capacities on the pieces in this set are best for families of 4 and no more–a major letdown.

Anolon Nouvelle Stainless Handle

 

The handles are connected via dual rivets. In addition, the deep-seated, dome-shaped stainless steel lids complement the aesthetics, and the tall lid handles are a storage convenience as they can slide over the pots’ handles for hanging. And cleaning this set is awesome as they are dishwasher safe without the worries associated with nonstick. However, to maintain a shiny, spotless look, I’d advise that you hand wash them. Again, the visible copper ring tends to dull after significant use–that’s common, but you can DIY some hacks to get back its luster.

Coatings

The exterior features polished stainless steel, while the interior is brushed stainless steel. The best part is that you do not need to worry about flaking or chipping. The sad bit is that most delicate foods will stick to the walls, and they increase the use of oil significantly. To avoid frustration, familiarize yourself with the dos and don’ts of cooking with stainless steel cookware–it should help reduce the amount of clean-up needed.

The multilayer base with ferromagnetic properties in the base makes this cookware excellent for use with all kinds of stovetops, including induction. The cookware, including the lids, is also oven safe up to 500°F.

Final Thoughts

This is a good stainless steel cookware collection at a bargain of the price you have to pay for ‘bigger and better brands.’ The performance is adequate if you know your way around stainless steel cookware. It is also relatively easy to care for and maintain the pieces in this set. The small saucepan is a bit of a letdown and a potential hazard. Otherwise, this will be a pretty functional set for a medium-sized family.

A polished-looking set–literally, with stove-to-oven versatility!

Construction

The description is in the name. This cookware is made of three metal layers–steel, aluminum, and steel. The construction features even thickness for walls and the base, facilitating even cooking. It does take significantly longer to heat and distribute heat (that’s stainless steel), so cooking tends to take slightly longer (by minutes if anyone cares to count). However, the retention is enough to facilitate even cooking once heated up.

Of course, the set is said to be non-reactive due to its stainless steel properties. It’s also supposed to resist scratching and denting–but is not as durable as cookware made using 18/10 steel. Anolon has insisted that they avoid 18/10 steel as it has less induction ability and instead uses 18/0 steel for better induction. However, more expensive brands feature the 18/10 as it’s the more durable and easier to clean and maintain variety.

The Tri-Ply can handle high heat, and resultantly, consumers have reported excellent steady simmering and even browning using this set. However, delicate foods need a decent amount of oil and a good knowledge of working with stainless steel to keep them from excessive sticking. You also need to be mindful as it is possible to burn your food–the opaque, stainless steel lid doesn’t help much on that front either.

The set also comes with riveted steel handles which get hot when cooking, so be careful when handling them.

Coatings

The Tri-ply cookware comes with a sophisticated-looking stainless steel surface. The exterior is polished stainless steel, while the interior is brushed stainless. Cleaning and maintaining are not difficult–the set is dishwasher safe, but handwashing is always preferred. The protruding rivets do not affect the interior layer as it does on nonstick–it’s just problematic when cleaning the grease and residue that gets caught.

Anolon’s collection with the least number of pieces–designed to offset what some saw as the drawbacks to the popular Tri-Ply set.

Construction

This is pretty much an upgrade (or downgrade, based on your preferences) to the Tri-Ply collection. The set features the same three-layer construction–an aluminum core sandwiched between stainless steel layers. The cooking performance does not differ in any way. Remember to preheat your pan, then let your oil heat up before pouring in your food to avoid sticking.

The major differentiator is in the cookware’s hardware. The long stainless steel, SureGrip handles on this set are insulated in silicone for comfort when holding the cookware (hot or cold). The handles come in either onyx or bronze, beautifully complementing the polished-looking cookware. For some, this seals the deal. But, it also lowers the heat tolerance, breaking the deal for others like myself. Notably, none of the saucepans have helper handles, which begs the question, “Why?”

Anolon also ditched the stainless steel lids and instead reverted to their custom deep-seated, shatter-resistant glass lids for this collection. With the likelihood of burning food on the stainless steel cookware, it’s a nice touch to be able to see what’s going on without having to lift the lids. The lid handles are also large enough to fit a mitted hand, which is a thoughtful addition.

Coatings

The Advanced Tri-Ply features exteriors with polished stainless steel and interiors with brushed stainless steel. The pans are easy to clean and also dishwasher safe. This cookware is made of 18/0 stainless steel, therefore not the most durable–in other words, hand wash to prolong longevity. The heat transfer is not as great as that of copper or aluminum, thus might slow down your cooking.

Compatibility with Different Stovetops and Ovens

The Advanced Tri-Ply Steel has great induction properties–making this cookware compatible across all stovetops, including induction tops. The silicone-wrapped handles, however, lower the oven heat tolerance. Therefore, the cookware is only oven safe up to 400°F. The glass lids are only safe to 350°F.
