KEFIR PANCAKES WITH VANILLA POACHED PLUMS
These spelt & kefir pancakes are really easy to make, good for you, and frrreakin’ delicious, I tell ya. The kefir, besides being super healthy, makes the pancakes chewy and soft. And who doesn’t like that. So be a nice gent or lady and get up half an hour before you’d otherwise do and bake these pancakes tomorrow.
(makes 8)
You need:
- 3/4 cup spelt flour
- 1 tsp baking powder
- 1/2 tsp ground vanilla
- a pinch of salt
- 2 tbsp maple syrup
- 2 eggs
- 3/4 cup kefir (or buttermilk)
For the poached plums
- 5 plums, cut in half
- 2 tbsp honey or sugar
- 1 vanilla pod, seeds scraped
- 1/2 cup water
For the maple butter
- 75 grams unsalted butter, room temperature
- 2 tbsp + 1 tsp maple syrup
How to make it:
- Place the dry ingredients for the batter in a bowl. Stir to combine.
- Separate the eggs. Add the whites to a different bowl. Set aside.
- Add the yolks to the bowl with the flour. Pour the kefir in there as well. Mix well.
- Whisk the egg whites until they are fluffy and form peaks. Using a spatula, fold the egg whites into the batter.
- Add a teaspoon of coconut oil in a non-stick frying pan and bake the pancakes on low heat. They need about a minute on each side. Spread with maple butter and top with some vanilla poached plums. Enjoy!
For the vanilla poached plums
- Place the plums in a bowl. Add the honey and vanilla and stir to coat. Let sit for about 5 minutes.
- Add the coated plums and the water to a sauce pan. Bring to a boil and let simmer for about 10 minutes. Set aside.
For the maple butter
- Whip the butter & maple syrup with a standing mixer until pale and fluffy.
