White peach & rooibos iced tea with fresh mint and honey
(serves 3-4)
You need:
- 3 bags of rooibos tea
- 1 liter water
- 3 white peaches, juiced
- 1 sprig of mint, leaves
- 1-3 tbsp of honey (to taste)
- ice cubes
How to make it:
Bring water to a boil. Add to a teapot. Brew the tea by adding the bags of rooibos. It doesn’t matter if you cut the bags open or not. If you do cut them open and your pot doesn’t contain a filter, make sure to strain the tea before adding the peach juice.
Set the tea aside for 30 minutes. Place the peaches in a juicer and pour the juice into the teapot. If using a blender, strain before adding to the rooibos tea.
Combine the mixture by stirring. Add the honey and mix again. Add the tea leaves and place in the fridge for at least 20 minutes.
Remove from the fridge. Stir once again and serve over ice. Enjoy!
